Zucchini Spaghetti with Lemon Avocado Sauce

What you will need:

  • Cheese/Box Grater
  • Food processor or high-powered blender
  • 2-3 Zucchini (washed)
  • 1 Avocado (or 2 small ones)
  • 2-3 Garlic cloves (minced)
  • 1 Lemon (juiced)
  • Coconut Oil (or you can use Olive Oil)
  • Himalayan salt & pepper
  • Basil (1/4 cup)

Preparation for the Zoodles: Wash zucchini really well. I personally don’t own one of those fancy spiralizers to give me the noodle effect.  But that’s where the box grater comes in handy.  Take the box grater and place it on its side with the side with the largest grating holes on it face up.  Cut the ends off the zucchini, then push along the top of grater, in long strokes in order to create long, thin ribbons of zucchini. Super easy!(see pic below)

Preparation for the Sauce:  Combine the avocado, 3 garlic cloves, basil, olive oil (about 1/2 cup), 1/2 tsp of salt, and lemon juice into your food processor or blender until its smooth.  If still too thick, you can add more oil, make sure to do your taste tests along the way and adjust accordingly.

Combining the two:  I used a large wok, or a large skillet will do, added 2 tbsp of coconut oil (or olive oil) and added the zoodles.  Fried the zoodles until slightly tender. Afterwards, just pour the sauce on top and mix everything very well. Serve, garnish, and enjoy this mouth-watery green goodness on a plate!

It doesn’t get any easier or more delicious than this!  Nom Nom…
